3 pounds chilled seedless watermelon, cut into one-inch chunks
10 ounces sheep's milk feta, cut into one-inch chunks
3 tablespoons extra virgin olive oil
1 tablespoon lemon juice
1/4 cup fresh mint, roughly chopped
Salt and freshly ground black pepper to taste
Instructions
In a large mixing bowl, combine the watermelon chunks with olive oil, lemon juice, chopped mint, and a sprinkle of salt and pepper. Toss gently until well combined.
Carefully add the feta chunks to the bowl and gently toss again to distribute without crumbling too much.
