  • 4 onions
  • 3 cloves garlic
  • 2 leeks
  • 2 carrots
  • 3 slices celery root (celeriac)
  • 2 cans white beans
  • 2 cans diced tomatoes
  • 8 cups vegetable stock
  • 200 g freekeh (or TVP)
  • Spices: paprika, oregano, marjoram, celery salt, onion powder

Instructions

  1. Soak freekeh or TVP overnight in vegetable broth.
  2. Sauté finely diced onions and minced garlic in a large pot over medium heat.
  3. Add chopped leeks, carrots, and celery root; sauté until softened.
  4. Stir in soaked freekeh or TVP, white beans, diced tomatoes, vegetable stock, tomato paste, and spices.
  5. Simmer for about 20 minutes until flavors meld.
