  • 300 g (2 ½ cups) white bread flour
  • 200 g (1 ⅔ cups) plain (all-purpose) flour
  • 10 g (3 tsp) fast action/instant yeast
  • 50 g (¼ cup) caster/granulated sugar
  • 120 ml (½ cup) aquafaba
  • 200 ml (½ + ⅓ cup) unsweetened non-dairy milk
  • 200 g (7 oz) vegan block butter or mild olive oil

Instructions

  1. In a stand mixer bowl, combine white bread flour and plain flour. Add yeast on one side and salt and sugar on the other; mix well.
  2. Incorporate aquafaba, non-dairy milk, and vanilla extract until a rough dough forms. Knead until smooth.
  3. Add softened vegan butter or olive oil; mix until fully combined.
  4. Transfer dough to a bowl, cover, and refrigerate overnight for the first rise.
  5. The next day, shape the dough into a loaf or rolls; let rise until doubled in size.
  6. Preheat oven to 180°C/350°F and prepare glaze with non-dairy milk, maple syrup, and oil. Brush over risen dough.
  7. Bake for about 20 minutes, brush again with glaze, then reduce temperature to 160°C/320°F for an additional 25-30 minutes.
  8. Cool in the tin for fifteen minutes before transferring to a wire rack.
