  • 2 medium sweet potatoes, cubed
  • 4 cloves garlic, minced
  • 1 cup bell pepper, chopped
  • 1 (15 oz) can chickpeas, drained
  • 1 (14 oz) can full-fat coconut milk
  • 1/2 cup onions, chopped
  • 4 tablespoons red curry paste
  • Salt and pepper to taste
  • 1 large handful spinach, chopped

Instructions

  1. In a large casserole or pot, heat oil or vegetable broth over medium heat. Sauté minced garlic, chopped onions, and bell pepper for about 3 minutes until softened.
  2. Add cubed sweet potatoes along with coconut milk and red curry paste. Stir well and cook for about 10 minutes until sweet potatoes are tender.
