  • 1 cup steamed and mashed sweet potato
  • 1/3 cup cocoa powder
  • 1/4 cup oat flour
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/4 cup peanut butter
  • 1/4 cup maple syrup
  • 1/4 cup melted coconut oil
  • 3/4 teaspoon vanilla extract
  • 1/2 cup chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C) and line an 8×8 baking pan with parchment paper.
  2. Steam sweet potato until soft; then mash it in a food processor.
  3. Add cocoa powder, oat flour, baking soda, salt, peanut butter, maple syrup, melted coconut oil, and vanilla extract to the food processor. Blend until smooth.
  4. Stir in chocolate chips and pour batter into the prepared pan. Top with more chocolate chips if desired.
  5. Bake for approximately 25 minutes or until a toothpick inserted comes out clean. Allow cooling before slicing.
