  • 2 cups cooked shredded chicken

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Halve the butternut squash and remove the seeds. Brush cut sides with olive oil, drizzle honey, and sprinkle with cinnamon, salt, and pepper.
  3. Place squash cut side down on a baking sheet and roast for 30–40 minutes until tender.
  4. In a skillet over medium heat, sauté diced onion and minced garlic in olive oil until softened. Add shredded chicken and chicken broth; cook until heated through.
  5. Stir in Parmesan cheese, cranberries, walnuts, salt, and pepper to taste.
  6. Mix scooped-out squash flesh into the filling for extra flavor.
  7. Stuff the mixture into roasted squash halves and return to the oven for an additional 15 minutes until golden brown.
