  • 1 medium onion
  • 3 tablespoons unsalted butter
  • 2 large eggs
  • 1/2 cup cream
  • 1/2 cup sour cream
  • 1/4 cup mayonnaise
  • 1 cup shredded cheddar cheese
  • 1/2 teaspoon salt
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon ground paprika
  • ground black pepper (to taste)
  • 1/2 cup shredded cheddar cheese (for topping)
  • 3 tablespoons unsalted butter (melted, for topping)
  • 1 sleeve buttery crackers (crushed)

Instructions

  1. Preheat your oven to 350°F and grease a 9×13 inch casserole dish.
  2. In a skillet, melt 3 tablespoons unsalted butter over medium heat. Add sliced yellow squash and chopped onion, seasoning with salt and pepper. Cook for about 5-10 minutes until tender; drain excess moisture.
  3. In a bowl, whisk together 2 large eggs, 1/2 cup cream, 1/2 cup sour cream, 1/4 cup mayonnaise, 1 cup shredded cheddar, 1/2 teaspoon salt, 1/4 teaspoon garlic powder, 1/4 teaspoon ground paprika, and ground black pepper. Stir in the drained squash mixture.
  4. Transfer the filling to the casserole dish and top with 1/2 cup shredded cheddar cheese mixed with crushed crackers and melted butter.
  5. Bake for 20-30 minutes until bubbly around the edges and golden brown on top.
