  • 2 1/2 pounds yellow squash (sliced)
  • 1/2 pound onion (chopped)
  • 10.5 ounces condensed cream of chicken soup
  • 1/2 cup sour cream
  • 4 ounces cheddar cheese (shredded)
  • 12 ounces cornbread stuffing mix
  • 1/2 cup butter (melted)

Instructions

  1. Preheat your oven to 350 degrees F.
  2. Grease a 13×9-inch baking dish with butter or non-stick spray.
  3. In a medium bowl, combine the cornbread stuffing mix and melted butter until well mixed.
  4. Layer half the stuffing mixture at the bottom of the baking dish.
  5. Boil salted water in a pot, add sliced squash and chopped onion, cooking for about five minutes until tender. Drain and pat dry.
  6. In another bowl, mix together sour cream and condensed cream of chicken soup until smooth.
  7. Fold in drained squash and onion into the sour cream mixture.
  8. Spoon the squash filling over the base layer of stuffing, spreading evenly.
  9. Sprinkle shredded cheddar cheese over the top of the squash mixture.
  10. Top with remaining stuffing mixture for added crunch.
  11. Bake for 20 to 30 minutes or until golden brown and bubbly.
