  • 1 cup shredded cheddar cheese

  • 2 large eggs (beaten)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking dish.
  2. In a skillet, melt butter over medium heat; add sliced squash and diced onion. Cook for 5–7 minutes until softened.
  3. In a mixing bowl, combine cooked squash mixture with cheddar cheese, sour cream, beaten eggs, garlic powder, salt, and pepper.
  4. Pour the mixture into the prepared baking dish and spread evenly.
  5. Mix crushed crackers with melted butter; sprinkle over the casserole.
