  • 2 lbs yellow squash (sliced)
  • 1 medium onion (diced)
  • 3 tablespoons butter
  • ½ cup sour cream
  • 1 can (10.5 oz cream of chicken soup)
  • 2 large eggs (beaten)
  • 1½ cups shredded cheddar cheese
  • ½ teaspoon garlic powder
  • ½ teaspoon paprika
  • Salt and black pepper (to taste)
  • 1½ cups crushed Ritz crackers
  • 3 tablespoons butter (melted)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking dish.
  2. In a large skillet over medium heat, melt the butter and sauté the sliced squash and diced onion until softened (about 8-10 minutes). Season with salt and pepper; let cool slightly.
  3. In a mixing bowl, whisk together sour cream, cream of chicken soup, beaten eggs, cheddar cheese, garlic powder, and paprika until smooth.
  4. Fold in the cooked squash and onion until well coated.
  5. Pour the mixture into the prepared baking dish and spread evenly.
  6. Combine crushed crackers with melted butter and sprinkle over the casserole.
  7. Bake for 30-35 minutes until golden brown and bubbly.
