  • 4.5 grams active yeast
  • 260 grams rice flour
  • 80 grams tapioca starch
  • 60 grams sorghum flour
  • 4.5 grams xanthan gum
  • 2 grams salt
  • 3 eggs (room temperature)
  • 1 tablespoon apple cider vinegar
  • 1 1/4 cups warm water
  • 1/4 cup light olive oil

Instructions

  1. Proof the yeast by combining warm water and honey, then mix in the yeast and let sit until frothy.
  2. In a large bowl, whisk together rice flour, tapioca starch, sorghum flour, xanthan gum, and salt.
  3. Combine the yeast mixture with dry ingredients along with eggs, vinegar, olive oil, and warm water; mix well.
  4. Beat the dough for 1-2 minutes until smooth.
  5. Transfer to a parchment-lined loaf pan and let it rise covered in a warm area for about an hour.
  6. Preheat the oven to 350°F (180°C) while the dough rises.
  7. Bake for 45-60 minutes until golden brown and the internal temperature reaches at least 200°F (93°C).
  8. Let cool before slicing.
