  • 3/4 lb rigatoni pasta
  • 1 lb chicken sausage
  • 2 cups grape tomatoes
  • 2 small zucchini
  • 1 large yellow onion
  • 5 cloves garlic
  • 3 tablespoons olive oil
  • 3 tablespoons tomato paste
  • 1 cup white apple vinegar or chicken broth
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup fresh basil (chopped)
  • Freshly grated Parmesan cheese

Instructions

  1. Boil the rigatoni in salted water until al dente (9-10 minutes). Drain and reserve 1/2 cup of water.
  2. In a skillet, heat olive oil over medium heat. Sauté the chopped onion until soft (about 10 minutes).
  3. Add chicken sausage to the skillet; cook until browned.
  4. Stir in minced garlic and tomato paste; then add grape tomatoes and white apple vinegar or chicken broth, seasoning with salt and pepper.
  5. Cook until tomatoes burst (about 10 minutes), then mix in diced zucchini for another 5 minutes.
  6. Combine drained rigatoni with the sauce in the skillet, adjusting consistency with reserved pasta water if needed.
  7. Serve topped with grated Parmesan cheese and fresh basil.
