  • 4 ounces cream cheese
  • 1¾ cup almond flour
  • ¼ cup coconut flour
  • ⅓ cup sugar substitute (1:1 ratio)
  • ½ cup raspberry preserves (sugar-free)
  • 2 eggs
  • 2½ cups unsweetened flaked coconut

Instructions

  1. Preheat your oven to 375°F and line an 8×8" baking pan with parchment paper.
  2. In a bowl, blend almond flour, coconut flour, butter, cream cheese, and sugar substitute until crumbly. Add one egg and mix until combined.
  3. Press the mixture into the bottom of the prepared pan and bake for 15-20 minutes until golden.
  4. In another bowl, whisk two eggs and mix in the sugar substitute, almond extract, and flaked coconut.
  5. Spread raspberry preserves over the baked crust, then pour the coconut mixture on top.
  6. Bake for an additional 20-25 minutes until the top is golden brown. Cool completely before slicing into squares.
