  • 1/3 cup melted coconut oil
  • 2 eggs
  • 2/3 cup sugar (or granulated erythritol)
  • 1 tsp vanilla extract
  • 1/2 cup mini chocolate chips (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and grease an 8-inch pan or line it with parchment paper.
  2. In a mixing bowl, combine almond flour, protein powder, cocoa powder, baking powder, and salt. Stir well.
  3. In another bowl, whisk together melted coconut oil, eggs, sugar (or erythritol), and vanilla extract until smooth.
  4. Pour the wet mixture into the dry ingredients and stir until fully combined; fold in chocolate chips if using.
  5. Spread the batter evenly in the prepared pan and bake for about 20 minutes or until a toothpick comes out clean.
