  • ¾ cup raisins
  • ½ cup sliced ripe banana
  • 1 teaspoon pure vanilla extract
  • 1¾ cups rolled oats
  • 2 teaspoons baking powder
  • 2 teaspoons ground cinnamon
  • 1 teaspoon baking soda
  • 1 teaspoon ground nutmeg
  • Pinch of ground cloves
  • 1½ cups finely shredded carrots
  • Optional: ½ cup chopped walnuts
  • Optional: Vanilla Bean Frosting

Instructions

  1. Prepare the wet ingredients by combining plant milk, dates, ¼ cup raisins, banana, and vanilla in a bowl. Let stand for 15 minutes.
  2. Preheat the oven to 350°F and line an 8-inch square baking pan with parchment paper.
  3. Blend oats into a fine powder in a blender and transfer to a large bowl. Stir in baking powder, cinnamon, baking soda, nutmeg, and cloves.
  4. Blend the soaked date mixture until smooth and add it to the oat mixture. Fold in remaining raisins, shredded carrots, and walnuts if using.
  5. Spread the batter into the prepared pan and bake for 40 to 45 minutes until golden. Cool before serving.
