  • 2 tsp. olive oil
  • 1 can (2.25 oz.) sliced black olives, drained (optional)
  • 1 cup shredded Mozzarella cheese
  • 1 cup shredded Italian Blend cheese
  • 4 beaten eggs
  • ½ cup heavy cream
  • 2 oz. sliced pepperoni

Instructions

  1. Preheat the oven to 400°F (200°C) and prepare a 9–10 inch glass pie dish with non-stick spray.
  2. In a non-stick frying pan, heat olive oil over medium-high heat and sauté mushrooms until browned.
  3. Drain the olives in a colander while mushrooms cook.
  4. In a mixing bowl, combine both cheeses with Italian herbs; spread them in the pie dish.
  5. Mix beaten eggs, heavy cream, and garlic powder; pour over the cheese mixture.
  6. Layer the cooked mushrooms and drained olives on top.
  7. Arrange pepperoni slices over everything and sprinkle remaining Italian herbs.
  8. Bake for 30–35 minutes until set and lightly browned.
  9. Let cool for 3–5 minutes before serving.
