  • 1 Tbsp olive oil
  • 3 garlic cloves, minced
  • 9oz (250g) cherry tomatoes, halved
  • ½ tsp dried basil
  • ¼ tsp fine salt
  • ⅛ tsp black pepper
  • 5oz (150g) baby spinach
  • ¼ cup (30g) grated parmesan cheese

Instructions

  1. Boil water in a large pot; add pasta and cook until al dente. Reserve ½ cup cooking water before draining.
  2. In a skillet, heat olive oil over medium-low heat; sauté minced garlic for about 45-60 seconds.
  3. Add halved tomatoes, basil, salt, and pepper; cook until tomatoes burst and release juices.
  4. Stir in spinach until wilted (about two minutes).
  5. Combine drained pasta with tomato mixture and grated parmesan; adjust moisture with reserved cooking water if needed.
  6. Serve topped with additional parmesan and freshly cracked pepper.
