  • 1 cup dry orzo pasta
  • 5 ounces baby spinach
  • 1 yellow onion, finely chopped
  • 3 garlic cloves, minced
  • 3 cups low-sodium chicken broth
  • Juice from ½ lemon
  • ½ cup grated Parmesan cheese
  • 1 tsp salt (divided)
  • 1 tsp black pepper (divided)
  • 1 tsp sweet paprika
  • 1 tsp garlic powder
  • 1 tbsp olive oil
  • 1 tsp unsalted butter
  • 1 tsp dried thyme
  • freshly ground black pepper (for serving)
  • chili flakes (for serving)

Instructions

  1. Season salmon fillets with salt, pepper, garlic powder, and paprika.
  2. In a nonstick skillet, heat olive oil and butter over medium-high heat; sear salmon for about 3-4 minutes per side until golden brown. Remove and set aside.
  3. In the same skillet, sauté minced garlic and chopped onion until soft. Add dried thyme and toast the orzo for about a minute.
  4. Pour in chicken broth, bring to a boil, then simmer uncovered for about 8 minutes until most liquid is absorbed.
  5. Stir in baby spinach until wilted; add lemon juice and Parmesan cheese, adjusting seasoning as needed.
  6. Return salmon to the skillet; simmer for another 2-3 minutes until heated through.
  7. Serve topped with freshly ground pepper and chili flakes.
