  • 3 garlic cloves (minced)
  • 1 cup dry orzo pasta
  • 1 tsp dried thyme
  • 3 cups low sodium chicken broth
  • 5 ounces baby spinach
  • juice from ½ lemon
  • ½ cup grated Parmesan
  • freshly ground black pepper (for serving)
  • chili flakes (for serving)

Instructions

  1. Season salmon fillets with garlic powder, paprika, salt, and pepper.
  2. Sear the salmon in a nonstick skillet until golden brown; remove and set aside.
  3. In the same skillet, sauté chopped onion and minced garlic until fragrant.
  4. Add orzo and toast for a minute before pouring in chicken broth; simmer until orzo is al dente.
  5. Stir in spinach until wilted; mix in lemon juice and Parmesan cheese.
