  • 2 chicken breasts (220g each, skinless and boneless)
  • 7 oz sliced mushrooms (200g)
  • 3 oz mozzarella cheese (80g)
  • 2 cloves garlic, minced
  • 2 cups fresh baby spinach
  • 1 tablespoon olive oil
  • 2 tablespoons unsalted butter (30g)
  • 1/2 teaspoon thyme leaves
  • 3/4 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Prepare the filling by melting butter in a skillet over medium heat. Sauté sliced mushrooms for about 5-7 minutes until soft. Add minced garlic and thyme; cook for an additional minute. Stir in spinach until wilted. Remove from heat.
  2. Preheat your oven to 375°F (190°C). Butterfly the chicken breasts and season with salt and pepper. Fill each breast with the mushroom mixture and top with mozzarella slices.
  3. In a skillet, heat olive oil over medium heat. Sear stuffed chicken for 3-4 minutes on each side until golden brown, then transfer to a baking dish and bake for 15-20 minutes, or until cooked through.
