  • 12 street taco size corn tortillas
  • 3 tablespoons vegetable oil
  • 16 ounces traditional refried beans
  • 2 cups shredded rotisserie chicken breast
  • 2 cups shredded cheese (sharp cheddar or Monterey Jack)
  • sour cream
  • diced red onion
  • chopped cilantro
  • cherry tomatoes
  • hot sauce

Instructions

  1. Preheat your oven to 450°F.
  2. Line a baking sheet with foil and brush both sides of the tortillas with oil. Arrange them on the sheet.
  3. Bake tortillas for 9 to 10 minutes until firm.
  4. Remove from the oven, let cool briefly, flip each tortilla, spread with refried beans, top with chicken and cheese.
  5. Return to the oven for an additional 5 to 6 minutes until heated through and cheese is melted.
  6. Top with sour cream, diced onion, tomatoes, cilantro, and serve immediately.
