  • 1 large spaghetti squash
  • 1/2 lb lean ground beef
  • 24 oz marinara sauce
  • 1 cup ricotta cheese
  • 1 1/2 cups shredded mozzarella cheese (divided)
  • 1/4 cup grated Parmesan cheese
  • 1 tsp Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C). Cut the spaghetti squash in half lengthwise and remove the seeds.
  2. Place the squash halves cut-side down in a baking dish. Bake for 50-60 minutes until fork-tender. Let cool before shredding with a fork.
  3. In a medium skillet over medium heat, cook ground beef until browned (7-10 minutes). Drain excess grease, then stir in marinara sauce and simmer for 2-3 minutes. Season with salt and pepper.
  4. In a mixing bowl, combine ricotta cheese, Italian seasoning, salt, pepper, Parmesan cheese, and 1 cup of mozzarella.
  5. Pour half of the meat sauce over each squash half; mix with shredded squash. Spread ricotta mixture on top, followed by remaining meat sauce and mozzarella.
  6. Bake again for 10-20 minutes until cheese is melted and bubbly. Broil for an extra 2-3 minutes if desired.
