  • 1 yellow onion, diced
  • 3 large carrots, chopped
  • 3 celery stalks, chopped
  • 3 cloves garlic, minced
  • ½ teaspoon cumin
  • ½ teaspoon dried thyme
  • 1 bay leaf
  • 6 cups vegetable broth
  • 1 cup brown lentils, rinsed
  • 1 lb red potatoes, chopped into 1" pieces
  • 1 cup baby spinach

Instructions

  1. In a large pot, heat olive oil over medium heat. Add diced onion, chopped carrots, and celery; sauté for 10-12 minutes until softened.
  2. Stir in minced garlic and cumin; cook for another minute.
  3. Add bay leaf, thyme, vegetable broth, rinsed lentils, and chopped red potatoes; bring to a boil.
  4. Lower heat and let it simmer for 30-35 minutes until lentils are tender.
  5. Just before serving, fold in baby spinach until wilted. Season with salt and pepper.
