  • 4 eggs (separated)
  • 1 tablespoon vanilla extract
  • 1/2 cup coconut flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/4 cup water
  • 1 cup mascarpone cheese
  • 1 cup whipping cream
  • 2 tablespoons erythritol (ground)
  • 1 tablespoon vanilla extract
  • 2 cups strawberries (sliced)

Instructions

  1. Combine chopped strawberries, lemon juice, erythritol, and water in a bowl and let sit for 10 minutes.
  2. Cream softened butter and erythritol until fluffy; add egg yolks one at a time, then stir in vanilla.
  3. Mix dry ingredients (coconut flour, baking powder, salt) and gradually combine with the wet mixture.
  4. Pour batter into a greased baking dish and bake at 350°F (175°C) for about 25 minutes. Cool completely.
