  • 2/3 cup coconut flour
  • 2 tbsp psyllium husk powder
  • 1 tsp xanthan gum
  • 1 tsp baking powder
  • GENEROUS pinch salt
  • 1 tbsp nigella and/or sesame seeds
  • 1 cup hot water
  • 1/4 cup full fat natural yogurt
  • 2 tbsp coconut oil or olive oil (melted)
  • 2 tbsp coconut oil or butter or olive oil (melted)
  • Handful chopped parsley or coriander/cilantro

Instructions

  1. Preheat the oven to 180°C (356°F).
  2. In a mixing bowl, combine coconut flour, psyllium husk powder, xanthan gum, baking powder, and salt until well mixed.
  3. Add hot water and yogurt to the dry ingredients; stir until a dough forms.
  4. Shape into a ball and let it rest until non-sticky.
  5. Divide the dough into six pieces and roll each between parchment paper into flatbreads about 1/2 cm thick.
  6. Bake on an upturned baking sheet for 12-15 minutes until browned.
