  • 3 large bell peppers
  • 1 tsp olive oil
  • 1/4 tsp fennel seeds
  • 1 pound lean ground beef
  • 1 cup keto tomato sauce
  • 1 1/2 cups shredded mozzarella cheese (divided)
  • 1 cup whole milk ricotta cheese
  • 1/4 cup Parmesan cheese

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cut the tops off each bell pepper and remove seeds and membranes. Lightly coat the insides with olive oil.
  3. In a skillet over medium heat, add olive oil and fennel seeds; sauté for about 30 seconds. Add ground beef and cook until browned.
  4. Stir in the keto tomato sauce, then mix in half of the mozzarella and all of the ricotta cheese.
  5. Fill each pepper with the beef-cheese mixture, topping with remaining mozzarella and Parmesan.
  6. Place peppers in a baking dish, cover with foil, and bake for 30 minutes. Remove foil and bake an additional 10 minutes until cheese is golden.
