  • 1 cup unsweetened shredded coconut
  • 1/2 cup chopped pecans
  • 2 cups almond flour
  • 1/2 cup Swerve Sweetener
  • 1/3 cup cocoa powder
  • 8 ounces cream cheese (softened)
  • 3 large eggs
  • 14 tbsp butter (melted, divided)
  • 1/2 cup cold coffee or water
  • 1/2 tsp vanilla extract
  • 1 cup powdered Swerve Sweetener
  • 1/2 cup sugar-free chocolate chips
  • 2 tsp baking powder
  • 1/2 tsp salt

Instructions

  1. Preheat your oven to 325°F and grease a 9×13 baking pan.
  2. Layer the bottom of the pan with shredded coconut and chopped pecans.
  3. In a bowl, whisk together almond flour, Swerve Sweetener, cocoa powder, baking powder, and salt. Stir in eggs, melted butter, coffee or water, and vanilla extract until smooth.
  4. Pour the batter over the coconut mixture in the pan.
  5. In another bowl, beat cream cheese and remaining melted butter until smooth. Gradually add powdered Swerve Sweetener.
  6. Dollop cheesecake mixture over the cake batter and swirl gently using a knife.
  7. Sprinkle sugar-free chocolate chips on top.
  8. Bake for 35-45 minutes until mostly set but slightly soft in the center.
  9. Allow cooling for at least 20 minutes before slicing.
