  • 1 pound turkey bacon
  • 8 ounces cream cheese
  • 1/2 cup grated Parmesan cheese
  • 1 1/2 cups shredded sharp cheddar cheese
  • 1/3 cup avocado mayonnaise
  • 1 cup heavy cream
  • 1 store-bought rotisserie chicken (meat removed and chopped)
  • 1 1/2 cups diced red onion
  • 8 ounces sliced baby bella mushrooms
  • 8 ounces baby spinach
  • 2 cups shredded mozzarella cheese

Instructions

  1. Preheat the oven to 375°F.
  2. Cook turkey bacon in a large skillet until crispy and set aside.
  3. In a medium saucepan, combine cream cheese, Parmesan, cheddar, mayonnaise, heavy cream, hot sauce, dry mustard, white pepper, garlic powder, onion powder, and paprika. Cook over medium heat until creamy.
  4. Fold chopped turkey bacon into the cheese mixture.
  5. Sauté onions in reserved bacon fat until softened; add mushrooms and cook until tender. Stir in garlic and spinach until wilted.
  6. Mix the creamy cheese mixture with sautéed vegetables and chicken; transfer to an 8×12 inch casserole dish.
  7. Top with shredded mozzarella and bake for 20 minutes or until bubbly; broil for an additional 1–2 minutes if desired.
  8. Let rest for 10 minutes before serving.
