  • 16 oz pasta (brown rice penne recommended)
  • 1 + 3/4 cups cottage cheese
  • 1 + 1/2 cups roasted red peppers
  • 5 garlic cloves, minced
  • 1 shallot, minced
  • 2 tbsp olive oil
  • 1 tsp salt + additional to taste
  • 1/2 tsp black pepper
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 1/4 tsp red pepper flakes (optional)
  • 2 tbsp tomato paste
  • 1/3 cup fresh basil leaves + additional for topping, if desired
  • 2 tbsp nutritional yeast

Instructions

  1. Heat olive oil in a large skillet over medium heat. Sauté minced shallot and garlic for 3–5 minutes until softened.
  2. Boil salted water in a pot and cook pasta until al dente; drain and set aside.
  3. Add salt, black pepper, oregano, basil, and tomato paste to the skillet. Cook for 2–3 minutes until aromatic; remove from heat.
  4. In a blender, combine cottage cheese, roasted red peppers, fresh basil leaves, nutritional yeast, and the cooled shallot-garlic mixture. Blend until smooth.
  5. Pour the sauce over cooked pasta and mix well to coat evenly.
  6. Serve immediately with chopped basil on top.
