  • 2 celery stalks, diced
  • 1 1/2 cups dried green or brown lentils, rinsed
  • 3 medium potatoes, diced
  • 1 can (14.5 oz) diced tomatoes
  • 8 cups vegetable broth
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • 1/2 tsp dried thyme
  • 1/2 tsp dried rosemary
  • Salt and black pepper, to taste
  • 2 cups fresh spinach or kale (optional)
  • Fresh parsley, for garnish

Instructions

  1. In a large pot, heat olive oil over medium heat. Sauté the diced onion, carrots, and celery for about 5 minutes until softened.
  2. Add minced garlic and cook for an additional minute until fragrant.
  3. Stir in lentils, potatoes, diced tomatoes (with juices), vegetable broth, and seasonings. Mix well.
  4. Bring to a boil; then reduce heat to low and cover. Simmer for 30–40 minutes until lentils and potatoes are tender.
  5. If desired, add fresh spinach or kale during the last five minutes of cooking until wilted.
  6. Taste and adjust seasoning before serving hot.
