  • 1 medium Onion (diced)
  • 3 cloves Garlic (minced)
  • 1 tsp Fresh ginger (minced)
  • 1/2 cup Bell peppers (diced)
  • 1 tsp Italian seasoning (optional)
  • 1/4 tsp Red pepper flakes (optional)
  • 1 tsp Sea salt
  • 1/2 tsp Black pepper
  • 1 lb Boneless skinless chicken breasts
  • 6 cups Chicken broth, reduced sodium
  • 1 cup Broccoli (cut into florets)
  • 1 cup Cauliflower (cut into florets)
  • 2 tbsp Lemon juice

Instructions

  1. Heat olive oil in a Dutch oven over medium-high heat until shimmering.
  2. Sauté diced onion, minced garlic, and ginger for 3-4 minutes until fragrant.
  3. Stir in diced bell peppers and optional seasonings; cook for an additional 3 minutes.
  4. Add chicken breasts and pour in chicken broth; bring to simmer and cook for 20 minutes.
  5. Remove chicken, shred it, then return it to the pot along with broccoli and cauliflower.
  6. Simmer for another 10 minutes until vegetables are tender.
  7. Remove from heat and stir in fresh lemon juice before serving.
