  • 1 pound boneless skinless chicken breasts
  • Salt and black pepper
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon dried thyme
  • ½ teaspoon dried rosemary
  • ½ teaspoon paprika
  • ¼ to ½ teaspoon chili powder
  • 1 small yellow onion
  • 3 cups broccoli florets
  • 1 zucchini
  • 1 small yellow bell pepper
  • 1 small red bell pepper
  • ¼ cup low sodium chicken broth (or apple juice/vinegar)

Instructions

  1. Cut the chicken into 1-inch pieces and season with salt, pepper, and half the spice mix.
  2. Heat 1 tablespoon of olive oil in a large skillet over medium-high heat; cook the chicken until browned and fully cooked (6-8 minutes). Set aside.
  3. In the same skillet, add remaining olive oil and sauté onions for about 2 minutes. Add broccoli, zucchini, yellow bell pepper, and red bell pepper; cook until crisp-tender (4-6 minutes).
  4. Pour in the broth (or alternative) and return the chicken to the skillet; stir to combine and heat through for an additional minute.
  5. Serve hot garnished with fresh parsley.
