  • 3/4 cup + 2 tablespoons water

  • 2 1/2 cups gluten free all-purpose baking flour (with xanthan gum)
  • 1 teaspoon salt
  • 1 teaspoon baking powder
  • 5 tablespoons olive oil
  • 1 egg
  • 1 teaspoon vinegar (white or apple cider)

Instructions

  1. Warm the water to about 110-115°F and mix in the sugar and yeast. Let sit for 5 minutes until frothy.
  2. In a separate bowl, whisk together the flour, baking powder, and salt.
  3. Combine the egg, vinegar, olive oil, and yeast mixture with dry ingredients. Mix until a sticky dough forms.
  4. Cover with plastic wrap and let rise in a warm place for 1 hour.
  5. Preheat oven to 425°F (220°C) and chill the dough in the fridge for 15 minutes.
  6. Transfer dough onto parchment paper, knead lightly with additional flour if needed, then roll into a roughly 12-inch circle.
  7. Brush with olive oil and pre-bake for about 12 minutes until golden.
  8. Add desired toppings and bake an additional 8-12 minutes based on preference.
