  • 1 tbsp olive oil
  • 1/2 pound ground beef
  • 1/2 pound ground Italian beef
  • 1 small onion (chopped)
  • 4 cloves garlic (minced)
  • 1 jar (24 oz) marinara sauce
  • 1 can (14.5 oz) diced tomatoes (liquid included)
  • 4 cups low sodium chicken broth
  • 1 tbsp Italian seasoning
  • 1/4 tsp sea salt (adjust)
  • 1/4 tsp ground black pepper
  • 1/4 tsp red pepper flakes (optional)
  • 2 cups spinach
  • 1 box (10 oz) gluten free lasagna noodles (broken in half)

Instructions

  1. Heat olive oil in a large stock pot or Dutch oven. Sauté chopped onion and minced garlic until fragrant and translucent.
  2. Add ground beef and Italian beef; cook until browned. Drain excess fat.
  3. Stir in marinara sauce, diced tomatoes (with liquid), chicken broth, Italian seasoning, salt, black pepper, and red pepper flakes (if using). Bring to a boil.
  4. Add broken gluten-free lasagna noodles to boiling soup; simmer for about 15 minutes until noodles are tender, stirring frequently.
  5. Fold in spinach until wilted and adjust seasonings as needed before serving hot.
