  • 2/3 cup applesauce
  • 2 eggs
  • 1 cup white sugar
  • 2 tsp vanilla extract
  • 1 cup almond flour
  • 1 1/4 cup oat flour
  • 2 tsp baking powder
  • 1/4 tsp salt
  • 1 tbsp cinnamon (for filling)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine softened butter, applesauce, eggs, white sugar, and vanilla extract until smooth.
  3. Gradually mix in almond flour, oat flour, baking powder, and salt until well blended.
  4. In a separate bowl, prepare the cinnamon sugar filling by combining melted butter, oat flour, white sugar, and cinnamon.
  5. For the crumb topping, mix brown sugar, almond flour, oat flour, and cinnamon with room temperature butter until crumbly.
  6. Grease an 8×8 baking dish; layer half the cake batter followed by half of the cinnamon filling. Swirl gently; repeat with remaining batter and filling.
  7. Bake for about 25 minutes; then add the crumb topping and bake for an additional 18 minutes until golden brown.
  8. Allow to cool completely before cutting into squares.
