  • 1 Tbsp cider vinegar
  • 2 Tbsp instant coffee granules
  • 1 cup boiling water
  • 1/2 cup avocado oil
  • 2 large eggs
  • 1 tsp pure vanilla extract
  • 1 3/4 cups gluten-free all-purpose flour
  • 3/4 cup raw cacao powder
  • 1 1/3 cups coconut sugar
  • 2 tsp baking soda
  • 1 tsp baking powder
  • 1 1/2 tsp sea salt
  • 1 1/2 cups chocolate chips (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease two 9-inch round cake pans.
  2. In a mixing bowl, combine coconut milk and cider vinegar to create buttermilk. Add instant coffee granules and boiling water; mix well.
  3. In another bowl, whisk together gluten-free flour, cacao powder, coconut sugar, baking soda, baking powder, and salt.
  4. Gradually add the dry mixture to the wet ingredients while stirring until combined.
  5. Mix in avocado oil and eggs one at a time; stir in vanilla extract.
  6. Fold in chocolate chips if desired before dividing the batter between the prepared pans.
  7. Bake for about 25 minutes or until a toothpick inserted into the center comes out clean.
  8. Cool cakes in their pans for 10 minutes before transferring them to wire racks.
