  • 6 tablespoons warm water
  • 2 tablespoons cane sugar
  • 1 1/2 cups gluten free flour blend
  • 1/8 teaspoon salt
  • 1/3 cup canned coconut milk
  • 1 large egg
  • 2 tablespoons melted butter
  • Oil for frying

Instructions

  1. Activate the yeast by mixing warm water, dry active yeast, and cane sugar; let sit for 10 minutes until frothy.
  2. In a bowl, combine gluten free flour blend and salt. Add the yeast mixture along with coconut milk, egg, and melted butter; mix into a soft dough.
  3. Cover the dough and let it rise for 45-60 minutes.
  4. Roll out the risen dough to about 1/2 inch thick on a floured surface and cut into squares.
  5. Heat oil in a Dutch oven to 350º F and fry dough squares for about 1½ minutes per side until golden brown.
  6. Drain excess oil on paper towels and coat with powdered sugar.
