Ingredients

  • 12 ounces brown rice noodles
  • 1 tablespoon oil
  • 6 cloves garlic
  • 1/41/3 cup low sodium soy sauce or tamari
  • 2 tablespoons veggie broth
  • 1 1/2 tablespoons rice vinegar
  • 2 tablespoons toasted sesame oil
  • 1 tablespoon honey or maple syrup
  • 2 tablespoons tahini
  • 2 teaspoons sriracha
  • 1/2 teaspoon ground ginger

Instructions

  1. Cook the brown rice noodles according to package instructions in a large pot of boiling water until tender.
  2. Mince the garlic finely and sauté it in a skillet with your choice of oil until golden brown.
  3. In a mixing bowl, whisk together the soy sauce, veggie broth, rice vinegar, sesame oil, honey or maple syrup, tahini, sriracha, and ground ginger.
  4. Pour the sauce into the skillet with sautéed garlic and let it simmer for 2-3 minutes.
  5. Drain the noodles and toss them with the sauce in the skillet until well combined.
  6. Serve garnished with scallions and crushed peanuts if desired.
