  • Kosher salt and ground black pepper
  • 2 teaspoons extra virgin olive oil
  • 23 tablespoons ghee (or butter)
  • 23 teaspoons minced garlic
  • Fresh parsley, roughly chopped

Instructions

  1. Cut the ribeye steak into 1-inch pieces and pat dry with paper towels. Season generously with kosher salt and ground black pepper.
  2. Heat a cast iron skillet over medium-high heat, adding olive oil to coat the pan. Once hot, sear the steak pieces for about 30-60 seconds on each side until browned. Remove from skillet and set aside.
  3. In the same skillet, add ghee and minced garlic; allow to melt. Return the seared steak along with any juices back to the skillet and toss gently in the garlic butter until well-coated.
  4. Cook until desired doneness is achieved (use an instant-read thermometer for accuracy). Aim for medium-rare at an internal temperature of 130-135°F.
  5. Serve warm, garnished with fresh parsley.
