  • 1/3 cup almond meal for gluten-free version (or breadcrumbs if preferred)
  • 1/3 cup parsley, finely chopped
  • 2 tablespoons butter
  • 2 tablespoons olive oil
  • 2 large yellow onions, thinly sliced
  • 4 large garlic cloves, minced
  • 1 tablespoon fresh thyme
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • 1 teaspoon ground black pepper

Instructions

  1. Preheat oven to 400°F and line a baking sheet with parchment.
  2. In a mixing bowl, combine ground chicken, chopped onion, garlic, egg, almond meal (or breadcrumbs), parsley, salt, and pepper.
  3. Form the mixture into meatballs (about 1½ inches) and place them on the prepared baking sheet. Bake for 15-20 minutes until cooked through.
  4. Meanwhile, in a skillet, heat olive oil and butter over medium heat. Add sliced onions and cook until golden brown (about 25 minutes). Stir in garlic and cook for an additional minute.
  5. Add beef broth, thyme, onion powder, salt, and pepper; bring to a boil then simmer for five minutes.
  6. Combine baked meatballs with the sauce in the skillet; sprinkle with cheeses and cover until melted.
