  • 12 oz potatoes (cut into bite-sized pieces)
  • 2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp thyme
  • 1/2 tsp oregano
  • 45 cups water

Instructions

  1. Heat vegetable oil in a large pot over medium heat. Sauté the onion for one minute, then add garlic and carrots; cook for another 2-3 minutes until fragrant.
  2. Stir in tomato paste and sauce (if using), followed by the lentils and potatoes. Pour in about 4 cups of water and season with salt, pepper, thyme, and oregano.
  3. Bring to a boil, then reduce heat to medium-low. Cover and let simmer for 25-35 minutes until lentils are tender.
  4. Taste and adjust seasoning if necessary before serving warm.
