  • 1 cup granulated sugar
  • ½ cup lemon juice, freshly squeezed
  • 1 tbsp lemon zest, grated
  • ½ cup gluten-free all-purpose flour
  • ⅛ tsp kosher salt
  • Powdered sugar for garnish

Instructions

  1. Preheat your oven to 350°F and line an 8×8-inch baking dish with parchment paper.
  2. In a bowl, beat softened butter, granulated sugar, lemon zest, and vanilla until fluffy. Add gluten-free flour and salt; mix until combined.
  3. Press the crust mixture into the baking dish and bake for 20 minutes until golden.
  4. In another bowl, whisk together eggs, granulated sugar, lemon juice, lemon zest, gluten-free flour, and salt until smooth.
  5. Pour the filling over the baked crust and return to the oven for another 20-30 minutes until slightly jiggly in the center.
  6. Cool completely before dusting with powdered sugar and slicing into bars.
