  • ½ cup cane sugar
  • 6 tablespoons unsalted butter (frozen)
  • ¼ teaspoon salt
  • 1 teaspoon pure vanilla extract
  • Filling: ½ cup cane sugar, 2 teaspoons ground cinnamon
  • Topping: 3 tablespoons unsalted butter (melted), ¼ cup cane sugar, ½ teaspoon ground cinnamon

Instructions

  1. In a small bowl, mix warm milk with yeast and cane sugar; let sit until frothy (5–10 minutes).
  2. In a large bowl, whisk gluten free flour blend, ½ cup cane sugar, and salt together.
  3. Add the yeast mixture and melted butter to dry ingredients; mix until a soft dough forms.
  4. Knead on a floured surface for about 2–3 minutes until smooth.
  5. Roll out into a rectangle about ¼ inch thick.
  6. Brush dough with melted butter; sprinkle the filling evenly over it.
  7. Roll tightly from one long edge and slice into equal pieces.
  8. Place upright in a greased muffin tin and let rise for about 30 minutes.
  9. Preheat oven to 375°F (190°C) and bake for approximately 25 minutes until golden brown.
