  • 4 chicken thighs (boneless, skinless)

  • 2 cloves garlic (minced)
  • 1 tbsp Italian seasoning
  • 1 tsp oregano
  • ¼ tsp red pepper flakes
  • ½ cup sun-dried tomatoes (drained and thinly sliced)
  • 1 cup chicken stock
  • ½ cup heavy cream
  • ¼ cup Parmesan (grated)
  • 1 tbsp cornstarch
  • ¼ cup fresh basil leaves (chopped)

Instructions

  1. Heat olive oil in a skillet over medium-high heat. Add chicken thighs, season with salt and pepper, and brown for 2-3 minutes on each side. Remove from skillet.
  2. In the same skillet, sauté minced garlic, Italian seasoning, oregano, red pepper flakes, and sun-dried tomatoes for 2-3 minutes.
  3. Pour in chicken stock and heavy cream; add grated Parmesan and cornstarch, whisking to combine.
  4. Return the browned chicken to the skillet, cover with sauce, lower heat, cover with a lid, and cook for 15-20 minutes until cooked through.
  5. Stir in chopped basil before serving warm.
