  • 1 1/2 cups milk
  • 1 cup heavy cream
  • 4 cups corn kernels (from fresh corn)
  • 1 large onion (finely diced)
  • 1 large carrot (diced)
  • 3 stalks celery (diced)
  • 1 lb Yukon potatoes (peeled and diced)
  • 23 tsp sea salt (or to taste)
  • 1/4 tsp black pepper
  • 1/4 tsp cayenne pepper (or to taste)
  • 2 tbsp chives (chopped, to garnish)

Instructions

  1. Gather all ingredients and chop vegetables into uniform pieces.
  2. In a large pot over medium heat, cook chopped turkey bacon until crispy; set aside.
  3. Sauté diced onion, carrot, and celery in the same pot for about 5-7 minutes until softened.
  4. Add chicken broth and Yukon potatoes; bring to a boil then simmer until potatoes are tender (about 10 minutes).
  5. Stir in corn kernels, milk, and heavy cream; cook on low heat for another 5 minutes.
  6. Season with salt, black pepper, and cayenne pepper to taste.
