  • 1 tbsp ground cinnamon
  • 1 tsp baking soda
  • 1/2 tsp sea salt
  • 1 1/2 cups mashed (cooked) sweet potato
  • 1/2 cup almond butter
  • 1/4 cup honey
  • 3 large eggs
  • 2 tsp vanilla extract
  • 1 tsp ground cinnamon (for topping)
  • 1 tsp coconut palm sugar (or brown sugar)
  • 1 tbsp unsalted butter (softened)
  • 1 tsp honey (for serving)

Instructions

  1. Preheat your oven to 350°F (175°C) and line an 8.5" loaf pan with parchment paper.
  2. Blend rolled oats into flour consistency in a high-speed blender.
  3. In a large bowl, whisk together oat flour, cinnamon, baking soda, and sea salt.
  4. Blend mashed sweet potato, almond butter, honey, eggs, and vanilla until smooth.
  5. Combine wet and dry ingredients gently without overmixing.
  6. Pour batter into the prepared loaf pan and spread evenly.
  7. Mix coconut palm sugar with additional cinnamon and sprinkle on top.
  8. Bake for about 50 minutes or until a toothpick comes out clean.
  9. Allow to cool before slicing.
