  • 1 large head cauliflower, chopped into florets
  • 1 (15-oz.) can chickpeas, rinsed and drained
  • 3 Tbsp. extra-virgin olive oil
  • 1 Tbsp. curry powder
  • 2 tsp. paprika
  • 1 tsp. ground cumin
  • 2 cups cooked white basmati rice
  • 1/4 cup tahini
  • 1/2 cup fresh cilantro leaves
  • 1/2 cup fresh parsley leaves
  • 2 Tbsp. fresh lemon juice
  • 1/2 tsp. minced fresh garlic
  • 1/4 tsp. ground cumin
  • 1/4 tsp. each kosher salt and black pepper

Instructions

  1. Preheat oven to 425°F (220°C).
  2. In a mixing bowl, combine spices (curry powder, paprika, cumin, salt, pepper) and toss cauliflower with half the mix and chickpeas with the other half along with olive oil.
  3. Spread on baking sheets and roast for about 30 minutes until golden brown and crispy.
  4. While roasting, blend all Green Tahini Sauce ingredients in a food processor until smooth.
  5. Assemble bowls by layering rice, roasted vegetables, and drizzling with sauce.
