  • 6 jalapenos (halved and seeds removed)
  • 3 cups fresh cauliflower florets
  • 6 strips thick-cut Turkey Bacon
  • 1 1/4 cup cheddar cheese
  • 8 oz cream cheese (1/3 less fat)
  • 1/2 cup light sour cream
  • 1/4 cup low-fat milk
  • 1 teaspoon cayenne

Instructions

  1. Preheat oven to 375°F.
  2. Place chicken breast and jalapenos on a baking sheet; drizzle with olive oil and salt. Bake for 20–25 minutes.
  3. In a bowl, mix together cream cheese, sour cream, milk, and cayenne until smooth.
  4. Shred the cooked chicken and chop the roasted jalapenos.
  5. Combine shredded chicken, chopped jalapenos, and turkey bacon with the cream cheese mixture.
  6. Layer cauliflower in a greased baking dish; top with the cream cheese mixture, remaining cheddar cheese, jalapenos, and turkey bacon.
