  • 8 slices turkey bacon
  • 1 pint grape tomatoes
  • 2 leeks
  • ½ cup keto mayonnaise
  • 2 tbsp dill pickle relish
  • 2 tbsp mustard
  • Green onions
  • pink salt
  • cracked black pepper

Instructions

  1. Boil cauliflower in salted water for about 7 minutes until tender; drain and cool.
  2. Roast halved tomatoes at 375°F for 20-30 minutes after drizzling with olive oil.
  3. Cook turkey bacon in a skillet until crispy; drain excess grease.
  4. Sauté rinsed leeks in the same skillet until translucent; set aside to cool.
  5. In a mixing bowl, combine dill pickle relish, mustard, mayonnaise, salt, and pepper to create the dressing.
  6. Mix cooled cauliflower, roasted tomatoes, green onions, cooked bacon, leeks, and dressing until well combined; season to taste.
