  • ⅓ cup white onion, chopped
  • 1 jalapeño, finely chopped
  • 2 15 oz black beans, drained and rinsed
  • ¾ cup tomato, chopped
  • 1 tsp garlic powder
  • 1 tsp chili powder
  • 1 tsp paprika
  • 1 tsp cumin
  • ½ tsp salt
  • 2 Tbsp hot sauce
  • 6 large tortillas (burrito size)
  • 6 tostadas
  • 6 fajita size tortillas (to close the wrap)
  • ⅓ cup sour cream
  • 1½ cup cheese, shredded
  • 1½ cup romaine, shredded
  • ½ cup salsa (optional)
  • 1 avocado, sliced thin (optional)
  • 2 Tbsp cilantro, chopped

Instructions

  1. Prepare Your Ingredients: Rinse and drain black beans; chop onions, jalapeños, and tomatoes.
  2. Sauté the Veggies: In a large skillet over medium heat, heat olive oil. Sauté onions until translucent, then add garlic powder, chili powder, paprika, cumin, salt, tomatoes, black beans, jalapeños, and hot sauce. Cook until heated through.
  3. Assemble Your Crunch Wrap: On a burrito tortilla, place a scoop of the bean mixture in the center. Add cheese, sour cream, romaine lettuce, avocado (if using), then top with a tostada. Cover with a small fajita tortilla and fold edges of the burrito tortilla around it.
  4. Toast Your Wrap: Heat a clean pan over medium heat; lightly spray with oil. Place the wrap folded side down first to seal it closed and cook until golden brown on both sides.
  5. Enjoy: Serve warm with optional salsa or additional toppings as desired.
